I chose this recipe for several reasons. One,
squash is a summer vegetable. Two this recipe is tasty. And three, my family
usually makes it for get-togethers. This is really easy to make and you will
feel prouder of yourself if you make this instead of buying it at the grocery
store.
Lela’s Squash Casserole
Ingredients:
8-10 medium sized squash
1 large onion
2 Tablespoons butter
1/2 cup of sour cream
2 beaten eggs
salt
pepper
1/2 cup of breadcrumbs
1/2 cup of grated cheese
How to make:
1. Cook 8-10 medium squash with 1 large chopped
onion. Drain and mash.
2. Add the butter,
sour cream, eggs, and a sprinkle of salt and pepper, and the breadcrumbs. Mix and pour into a casserole dish.
3. Top with cheese
(and more breadcrumbs if wanted).
4. Bake at 325 degrees
for 35 minutes.
