KEY LIME CUPCAKES
Ingredients:
1 package of lemon cake mix
1 1/3 cup of vegetable oil
4 eggs
1 (3 oz.) package lime gelatin mix
3/4 cup of orange juice
zest of a small lime

½ cup butter
1 (8 oz.) package of cream cheese
3 1/2 tablespoons of fresh lime juice
4 cups of confectioners’ sugar
Procedure:
Combine cake mix, gelatin mix, oil, eggs, and orange juice. Pour batter into cupcake pans lined with baking cups and bake according to directions on box.
To make the frosting: In a large bowl, beat the butter and cream cheese until light and fluffy. Then add the lime juice and confectioners’ sugar and mix well.
Decorate your cupcakes with sprinkles, candy pieces or writing icing!
